Ricotta Spaetzle

  • 1 cup Flour
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Ricotta
  • 2 tablespoons Water


Set a large pot of water to boil. Mix the salt and flour together. Whisk eggs in a separate bowl with ricotta and water until smooth. Add the flour to the egg and cheese mixture. The batter will be thick and doughy. Pour mixture onto nana’s pasta maker (a bit at a time) and use your scraper to push the batter into the simmering water. Once the noodles float to the top they are done. Drain and toss with a bit of butter and seasonings/herbs of your choice. Enjoy!
